IGNITE’S SIGNATURE JACKED UP SMOKED MEATLOAF

INGREDIENTS

2 lb ground beef or chuck 85/15

¾ cup Panko breadcrumbs

¼ cup Bear and Burtons W Sauce

2 eggs

2 t. black pepper

3 cloves chopped garlic or equivalent minced garlic

6 slices thick smoked bacon

6 1/8 inch chunks of pepperjack cheese

SAUCE:

1/3 cup Smoke This Smokey Chipotle Sauce

INSTRUCTIONS:

  1. Mix ground beef, panko, eggs, W sauce, black pepper, and garlic together.
  2. Form loaf in cast iron skillet.  Insert pepper jack cheese into center of loaf.
  3. Brush on Smokey Chipotle Sauce on loaf
  4. Wrap loaf with bacon
  5. Add rub to bacon
  6. Place cast iron skillet/loaf on smoker/grill at 275 degrees.  Smoke until internal temperature is 160 degrees.  Allow to rest 15-20 minutes.
